For some time now, debates continue on the health benefits of coffee. There are a variety of studies which found that indulging on certain amounts of coffee causes high blood pressure, heart ailments and even ulcers. On the other hand, there have been an almost equal number of researches that proved the health benefits of drinking coffee. Let's look more closely at the benefits. Recent medical findings have shown that regular consumption of coffee reduces the risk of Parkinson's, diabetes, and even lowers the risk of having colon cancer. And it seems that the high caffeine content of coffee is the one responsible for all these. The development of Parkinson's for one has been found out to be indirectly correlated to the intake of caffeine. The more you take in caffeine, the less the risk you developing the disease. The same goes with type 2 diabetes. As more studies are being conducted, the more they are moving towards making their studies conclusive, without any doubts whatsoever. It has been found that taking two cups of coffee a day can reduce the risk of developing colon cancer by as low as 25 percent. Also an 80% drop in the risk of having liver cirrhosis was observed in people who drink at least 2 cups of coffee on a daily basis. The antioxidants found in the coffee appear to be the ones responsible for reducing the chances of developing such diseases. It seems that the antioxidants control the growth of the cells of these diseases. Also, antioxidants are great sources of chlorogenic acid which have been found to be able to reduce glucose concentrations in one's body. However, one important factor in all these studies is the quantity of coffee consumption. They have found a number of benefits from drinking a cup or two per day. However, some of the benefits disappear once the individual drinks more than two cups of coffee in a day. The more you drink, the less benefits you will get. Aside from the antioxidant contents, coffee's caffeine also has some great effects on our body. Recent research from the University of Bristol found out that the caffeine influences our cognition and mood. According to the study, caffeine from coffee can increase alertness and performance thus increasing one's productivity especially in the workplace. Still, coffee does have some not so good effects. Caffeine contains a mild addictive stimulant, coffee itself can cause an increase heart rate as well as an increased blood pressure. But as always, the key is moderation.

The Coffee Plant Or Is It A Coffee Tree
The coffee plant may not be as diverse as the number of coffee flavors out there (there's no coffee plant that grows coffee hazelnut beans), but they are equally interesting. Coffee plants can be classified into two major species, the Coffea arabica and the Coffea canephora most commonly known as the robusta variety. Coffea arabica is a much older species. Its roots can be traced back as far as the mountains of Kaffa, Ethiopia. It is indigenous in south-western Ethiopia. Even though the Arabica coffee is well accepted as the better tasting variety, growing the plant can be a little daunting. The Arabica variety is more susceptible to diseases. Most of the Arabica variety is now being planted in Latin America, East Africa and in Asia and the Pacific. It is highly notable that even though the same Arabica specie is being grown in these countries, each country produces a slightly different kind of Arabica, having distinct flavors and characteristics. Aside from the flavors, highly noticeable differences will be observed in the coffee's aroma, the body or feel of the coffee as well as the acidity. And not only does the location affect the characteristics of coffee but the method of processing the coffee beans can also have varying effects. Arabica varieties grow well in the highlands. It is known that they grow best at altitudes between 3,000 to 6,000 feet. What the colder climate does is slow down the maturing time for the berry and creates a smaller and denser bean. The bean becomes less porous and contains less moisture which traps the flavor within the bean. The robusta variety, on the other hand, is a much sturdier plant. It contains 40–50% more caffeine than the Arabica. Even though its less superior in terms of taste, aroma and feel, robusta varieties are being cultivated since their resilience allow them to be grown in areas where the Arabica kind can't grow. The robusta coffee is somewhat bitter and has little flavor compared to the Arabica variety. Commercial and instant coffees are often made from robusta coffee beans. The coffee manufacturers use various techniques to remove the bitter taste and the card board smell from the beans. Aside from those two main species, other coffee species also exists. Coffea liberica and Coffea esliaca are some of the smaller specie coffee groups. The liberica coffee in particular can rival Arabica in taste, flavor and aroma. Liberaca even costs some more than the robusta kind. However, nothing beats coffees that are grown on smaller farm lands, estates or on peasant plots. The trick is in the handling of the plant during harvesting. If gathering the beans has been done haphazardly without quality control, chances are the bean's overall taste, flavor and aroma will be compromised.

The Coffee Bean Story
This is the story of how the humble coffee becomes a world celebrity. It's not about the Labrador named Coffee Beans attached to the Sheriff's Department sniffing drugs and bombs. It's about "the" coffee beans we are familiar with. It's about the fragrant aroma that stimulates our senses in the morning. The tingling sensation we get when we take the first sip in the morning. How we manage to get an extra boost of energy whenever we feel tired and sleepy. Let us take some time to ponder the processes the coffee beans have to go through before it can be marketed.
Processing The Coffee Beans
After the coffee berries have been harvested, it needs to undergo a process where the flesh of the coffee berries is removed. The coffee berries are placed in special machines separating the flesh from the seed. This coffee seed is commonly called "coffee beans". The coffee beans will now undergo a fermentation process for a period of time. This process is done in order to remove the slimy mucilage coating the coffee beans.
After the coffee beans have undergone the mandatory fermentation, they are thoroughly flushed with clean water. This process is to remove the foul smelling residue due to the fermentation process and the waste water is a main cause of pollutant.
The coffee beans are then dried under the sun or by machines, until the moisture level is about 10% before they can be packed for storage.
Another method of getting to the coffee beans without undergoing the fermentation process is to dry the whole berry in the sun. It normally takes about 10 to 14 days to complete the process with constant raking of the coffee beans to prevent mildew from forming. This method is popular and widely used by coffee producers where water is scarce. The dried flesh is then physically removed leaving only the coffee beans.
The dried coffee beans is then sorted and graded before they can be stored or shipped to buyers. At this stage, the coffee bean is called green coffee beans.
Sometimes the coffee beans will undergo an additional aging process. The reason for this is because when coffee was first introduced into Europe, the coffee beans have undergone a journey of about six months. Europeans have already developed a preference for this taste and therefore to simulate the taste, the coffee beans are further aged.
Roasting The Coffee Beans
Roasting is the final process the coffee beans have to undergo before they are commercially marketed. It is also possible to purchase un-roasted coffee beans that you can personally roast them yourself.
When the coffee beans are subjected to heat, there's a chemical reaction happening within the coffee beans where the sugar and acid will begin to react releasing its aroma. The coffee beans will turn darker due to caramelized sucrose. When this happens, the coffee beans are quickly cooled to prevent damage to the coffee beans.
When roasting the green coffee beans, a lot of carbon dioxide is released as a by-product. The carbon dioxide helps to "seal" the coffee beans from loosing its flavor and aroma. Depending on how the coffee beans are stored, it may take some time before the optimum peak flavor. After reaching its peak, it will start loosing its flavor again.
If you are trying to roast your own coffee beans at home, be aware that you may not be successful during the first few times. You might over-burn your coffee beans during your first few tries. Never be discouraged, but try until you get the taste and flavor that appeals to you. Remember to process in small amounts to maintain freshness of your coffee.
Grinding The Coffee Beans
Before the roasted coffee beans can be used, you need to grind the coffee beans first. The coarseness of your coffee depends on your preference and the type of coffee-brewing method. It can range from coarse to very fine as in the Turkish grind. For example, if you're using a percolator, a course coffee powder is suitable but if you are using an Espresso machines, an extra fine coffee powder is required.
